Layer 1: Cookie Base
- 1 cup unsalted butter melted
- 1/2 cup granulated sugar
- 2 cups crushed graham crackers about 14 full sheets
Layer 2: Chocolate Peanut Butter Filling
- 1 cup semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
Layer 3: Crispy Topping
- 1 1/2 cups crispy rice cereal
- 1/2 cup peanut butter
- 1/2 cup light corn syrup
- 1/2 cup granulated sugar
Layer 4: Chocolate Drizzle
- 1/2 cup semi-sweet chocolate chips melted (for drizzle)
Line a 9x13-inch baking dish with parchment paper.
In a bowl, mix melted butter, sugar, and crushed graham crackers until well combined. Press into the bottom of the pan to form a firm base. Chill for 10 minutes.
In a microwave-safe bowl, melt chocolate chips and peanut butter for the second layer. Stir until smooth, then spread evenly over the chilled crust. Chill again for 10 minutes.
In a saucepan, combine corn syrup, sugar, and peanut butter over medium heat until the sugar dissolves and the mixture is smooth. Remove from heat and stir in crispy rice cereal.
Spread the crispy mixture over the chocolate-peanut butter layer and press down gently.
Melt additional chocolate chips and drizzle over the top.
Chill the entire pan for at least 1 hour before slicing into bars.
