Ingredients
  

  • 2 large apples peeled, cored, and diced (Granny Smith or Honeycrisp recommended)
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking dish with parchment paper.
  • In a large bowl, whisk together sugar, brown sugar, eggs, oil, and vanilla until well combined.
  • In a separate bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
  • Add dry ingredients to the wet ingredients and stir just until combined.
  • Fold in diced apples gently until evenly distributed.
  • Pour batter into prepared baking dish and spread evenly.
  • Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in pan on a wire rack for at least 20 minutes before slicing into squares.
