- 3 cups frozen hash browns thawed
- 1 cup diced cooked ham or turkey bacon
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 1/2 cups shredded cheddar cheese
- 4 large eggs
- 1 12 oz can evaporated milk
- 1/4 tsp salt
- 1/4 tsp black pepper
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Spread the hash browns evenly in the bottom of the prepared dish.
In a skillet, sauté the onion and bell pepper until softened, about 4–5 minutes.
Sprinkle the cooked vegetables, diced ham or turkey bacon, and cheese over the hash browns.
In a medium bowl, whisk together eggs, evaporated milk, salt, and pepper. Pour evenly over the mixture in the dish.
Bake uncovered for 50–55 minutes, or until the center is set and the top is lightly golden.
Let stand 10 minutes before slicing and serving.
