- 3 cups frozen hash browns thawed
- 1 cup diced cooked ham or turkey bacon
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 1/2 cups shredded cheddar cheese
- 4 large eggs
- 1 12 oz can evaporated milk
- 1/4 tsp salt
- 1/4 tsp black pepper
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish. 
- Spread the hash browns evenly in the bottom of the prepared dish. 
- In a skillet, sauté the onion and bell pepper until softened, about 4–5 minutes. 
- Sprinkle the cooked vegetables, diced ham or turkey bacon, and cheese over the hash browns. 
- In a medium bowl, whisk together eggs, evaporated milk, salt, and pepper. Pour evenly over the mixture in the dish. 
- Bake uncovered for 50–55 minutes, or until the center is set and the top is lightly golden. 
- Let stand 10 minutes before slicing and serving.
