Ingredients
  

  • 3 cups frozen hash browns thawed
  • 1 cup diced cooked ham or turkey bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 1/2 cups shredded cheddar cheese
  • 4 large eggs
  • 1 12 oz can evaporated milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Spread the hash browns evenly in the bottom of the prepared dish.
  • In a skillet, sauté the onion and bell pepper until softened, about 4–5 minutes.
  • Sprinkle the cooked vegetables, diced ham or turkey bacon, and cheese over the hash browns.
  • In a medium bowl, whisk together eggs, evaporated milk, salt, and pepper. Pour evenly over the mixture in the dish.
  • Bake uncovered for 50–55 minutes, or until the center is set and the top is lightly golden.
  • Let stand 10 minutes before slicing and serving.

  • For more flavor, use a mix of sharp and mild cheeses.
  • Add chopped spinach or mushrooms for extra nutrition.
  • Make it spicy with a dash of hot sauce or red pepper flakes.
