Chicken Burrito Bowl Recipe

For the Chicken:
- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Juice of 1 lime
For the Rice:
- 1 cup white or brown rice
- 2 cups chicken broth or water
- 1/2 tsp salt
- 1/4 cup chopped cilantro
- Juice of 1 lime
For the Toppings:
- 1 cup black beans drained and rinsed
- 1 cup corn kernels fresh, canned, or frozen
- 1 cup cherry tomatoes halved
- 1/2 cup diced red onion
- 1 avocado sliced
- 1/4 cup shredded cheese cheddar or Mexican blend
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup salsa or pico de gallo
- Fresh cilantro for garnish
Prepare the Chicken:
In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
Rub the chicken breasts with olive oil and season evenly with the spice mix.
Heat a grill pan or skillet over medium heat. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Remove from heat and let rest for a few minutes before slicing.
Cook the Rice:
