Chicken Burrito Bowl Recipe

For the Chicken:
- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Juice of 1 lime
For the Rice:
- 1 cup white or brown rice
- 2 cups chicken broth or water
- 1/2 tsp salt
- 1/4 cup chopped cilantro
- Juice of 1 lime
For the Toppings:
- 1 cup black beans drained and rinsed
- 1 cup corn kernels fresh, canned, or frozen
- 1 cup cherry tomatoes halved
- 1/2 cup diced red onion
- 1 avocado sliced
- 1/4 cup shredded cheese cheddar or Mexican blend
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup salsa or pico de gallo
- Fresh cilantro for garnish
Prepare the Chicken:
- In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. 
- Rub the chicken breasts with olive oil and season evenly with the spice mix. 
- Heat a grill pan or skillet over medium heat. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). 
- Remove from heat and let rest for a few minutes before slicing. 
Cook the Rice:
- Rinse the rice under cold water. 
- In a medium saucepan, bring chicken broth or water to a boil. 
- Add rice and salt, reduce heat, cover, and simmer for about 15 minutes (or according to package instructions). 
- Remove from heat, fluff with a fork, and mix in lime juice and chopped cilantro. 
Assemble the Bowl:
- Divide the cooked rice into serving bowls. 
- Top with sliced chicken, black beans, corn, cherry tomatoes, and red onion. 
- Add avocado slices, shredded cheese, and a dollop of sour cream or Greek yogurt. 
- Drizzle with salsa or pico de gallo and garnish with fresh cilantro.
