Ingredients
  

For the Cookie Dough:

  • 3/4 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups semi-sweet chocolate chips

For the Cheesecake Layer:

  • 8 oz cream cheese softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions
 

  • Preheat Oven: Preheat to 350°F (175°C). Line an 8x8-inch or 9x9-inch baking pan with parchment paper.
  • Make the Cookie Dough: In a large bowl, cream together butter, brown sugar, and granulated sugar until smooth. Add egg and vanilla. Mix in baking soda, salt, and flour until combined. Stir in chocolate chips.
  • Make the Cheesecake Layer: In another bowl, beat cream cheese and sugar until smooth. Add egg and vanilla and beat until creamy.
  • Assemble: Press about 2/3 of the cookie dough into the bottom of the pan. Pour the cheesecake mixture over it and spread evenly. Drop small spoonfuls of the remaining cookie dough on top and gently press them down. Sprinkle a few extra chocolate chips on top.
  • Bake: Bake for 35 minutes or until the top is golden and the center is set.
  • Chill: Let the bars cool to room temperature, then refrigerate for at least 1 hour before slicing.

Notes

  • For cleaner cuts, chill well and wipe the knife between slices.
  • Make sure cream cheese is at room temperature to avoid lumps.
  • Store leftovers in the fridge for up to 5 days.
