- 1 1/2 cups creamy peanut butter not natural-style
- 1/2 cup unsalted butter softened
- 3 3/4 cups confectioners’ sugar sifted
- 1 teaspoon vanilla extract
- Pinch of fine salt
- 7 ounces semi-sweet chocolate chips
- 2 tablespoons coconut oil or vegetable shortening
Line a baking sheet with parchment or wax paper.
In a large bowl, mix together the peanut butter, softened butter, vanilla extract, and a pinch of salt until smooth.
Gradually stir in the sifted confectioners’ sugar until a stiff dough forms. Use your hands to bring it all together if needed.
Scoop about 2 teaspoons of dough and roll into a smooth ball. Place on the prepared baking sheet.
