Ingredients
  

For the Brownie Base:

  • 1/2 cup unsalted butter
  • 1/2 cup semi-sweet chocolate chips
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt

For the Strawberry Layer:

  • 1 1/2 cups fresh strawberries hulled and chopped
  • 1 tbsp lemon juice
  • 2 tbsp honey or sugar
  • 1 tbsp cornstarch mixed with 1 tbsp water

For the Chocolate Topping:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • Melt butter and chocolate chips in a saucepan over low heat. Stir until smooth.
  • Remove from heat and whisk in sugar, eggs, and vanilla.
  • Stir in cocoa powder, flour, and salt until combined.
  • Pour batter into prepared pan and smooth the top. Bake for 25-30 minutes.
  • Let brownies cool completely.
  • Meanwhile, cook strawberries, lemon juice, and honey in a saucepan over medium heat until strawberries break down.
  • Stir in cornstarch mixture and cook until thickened. Let cool, then spread over brownies.
  • Chill in the fridge for 1 hour.
  • Heat cream until hot but not boiling, then pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
  • Pour ganache over strawberry layer and spread evenly. Chill until set, about 1 hour.
  • Slice and serve.

  • Let each layer cool fully before adding the next to prevent melting.
  • Use fresh strawberries for best flavor.
  • Chill well before slicing for cleaner cuts.
  • Store in fridge for up to 4 days.
