Meanwhile, cook strawberries, lemon juice, and honey in a saucepan over medium heat until strawberries break down.
Stir in cornstarch mixture and cook until thickened. Let cool, then spread over brownies.
Chill in the fridge for 1 hour.
Heat cream until hot but not boiling, then pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
Pour ganache over strawberry layer and spread evenly. Chill until set, about 1 hour.
Slice and serve.
