Ingredients

  • 8 oz fettuccine or linguine
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 tbsp chopped parsley optional
  • Pinch of red pepper flakes optional

Instructions

  • Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain and set aside.
  • Sauté the shrimp: In a large skillet, heat olive oil over medium-high heat. Season shrimp with salt and pepper. Sear the shrimp for 1–2 minutes on each side until pink and opaque. Remove from skillet.
  • Create garlic butter base: In the same skillet, reduce heat to medium. Add butter and let it melt. Add minced garlic and sauté for about 1 minute until fragrant.
  • Make the cream sauce: Pour in chicken broth, stirring to deglaze the pan. Add heavy cream and bring to a simmer. Cook for 3–4 minutes until slightly thickened.
  • Add cheese & combine: Stir in Parmesan cheese until melted and smooth. Return shrimp to the skillet along with cooked pasta. Toss until everything is well-coated in the sauce.
  • Finish & serve: Sprinkle with chopped parsley and red pepper flakes if using. Serve immediately while hot.

Notes

  • Use fresh garlic for the best flavor.
  • Don’t overcook the shrimp—1–2 minutes per side is all you need.
  • Grate your Parmesan fresh for a smoother melt.
  • Add sautéed spinach or frozen peas for a veggie boost.
  • Swap chicken broth for dry white wine for more depth.
