- 1 tbsp olive oil
- 1 lb lean ground beef
- 1 small onion diced
- 2 garlic cloves minced
- 2 carrots peeled and diced
- 2 celery stalks diced
- 4 cups diced potatoes Yukon Gold or Russet
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 4 cups beef broth low sodium
- 1 cup milk or heavy cream
- 1 tbsp cornstarch mixed with 2 tbsp water optional, for thickening
- Fresh parsley for garnish
In a large soup pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
Add onion, garlic, carrots, and celery. Cook for 5–7 minutes, stirring occasionally.
Stir in potatoes, thyme, paprika, salt, and pepper. Mix well.
Pour in beef broth and bring to a boil. Reduce heat and simmer for 20–25 minutes until potatoes are tender.
Stir in milk or cream. If you want a thicker soup, stir in the cornstarch slurry and simmer for 2–3 more minutes.
Taste and adjust seasonings as needed. Serve hot, garnished with fresh parsley.
