Ingredients
  

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 small onion diced
  • 2 garlic cloves minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 4 cups diced potatoes Yukon Gold or Russet
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 4 cups beef broth low sodium
  • 1 cup milk or heavy cream
  • 1 tbsp cornstarch mixed with 2 tbsp water optional, for thickening
  • Fresh parsley for garnish

Instructions
 

  • In a large soup pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  • Add onion, garlic, carrots, and celery. Cook for 5–7 minutes, stirring occasionally.
  • Stir in potatoes, thyme, paprika, salt, and pepper. Mix well.
  • Pour in beef broth and bring to a boil. Reduce heat and simmer for 20–25 minutes until potatoes are tender.
  • Stir in milk or cream. If you want a thicker soup, stir in the cornstarch slurry and simmer for 2–3 more minutes.
  • Taste and adjust seasonings as needed. Serve hot, garnished with fresh parsley.

Notes

  • Swap ground beef for ground turkey for a lighter version.
  • Add frozen peas or corn during the last 5 minutes of cooking.
  • Use Yukon Gold potatoes for a creamier texture.
  • Double the recipe and freeze portions for future meals.
