Crisp & Swirled Cinnamon Sugar Palmiers

These Cinnamon Sugar Palmiers are elegant, buttery cookies with swirls of caramelized cinnamon and a crisp, golden finish. Made with store-bought puff pastry and a handful of pantry ingredients, they're the perfect mix of fancy and foolproof. Great for tea time, dessert trays, or edible gifting.

Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 1/4 cup granulated sugar for surface
  • 1 tablespoon melted butter
  • 1/3 cup granulated sugar for filling
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cardamom
  • Splash of water

Instructions
 

  • Sprinkle 1/4 cup of sugar on a clean surface. Place thawed puff pastry on top and gently roll into a 15x10-inch rectangle.
  • Brush the surface evenly with melted butter.
  • In a small bowl, mix 1/3 cup sugar, cinnamon, and cardamom. Sprinkle this mixture evenly over the buttered pastry.
  • Starting from each long side, roll both edges tightly toward the center until they meet in the middle.
  • Dab your finger with a bit of water and gently press along the seam to seal the two sides together.
  • Refrigerate the rolled pastry for 5-10 minutes to firm it up for slicing.
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the chilled roll into 1/4-inch slices. Lay the slices flat, spaced 1 inch apart on the baking sheet.
  • Bake for 12-14 minutes or until golden brown and crispy.
  • Allow to cool on the baking sheet for 1-2 minutes before transferring to a wire rack to cool completely.

Notes

  • Roll the pastry gently to avoid squeezing out the sugar.
  • Chill the rolled log to make slicing easier and cleaner.
  • Use a sharp knife for even slices.
  • Sprinkle extra cinnamon-sugar on top before baking for extra flavor.
