For the brownie base:
- 1/2 cup unsalted butter melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
For the chocolate chip layer:
- 1 cup semi-sweet chocolate chips
For the ganache topping:
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
In a large bowl, whisk together melted butter and sugar. Add eggs and vanilla, mix until combined.
Stir in cocoa powder, flour, and salt until just combined. Don’t overmix.
Spread batter into prepared pan and smooth the top.
Sprinkle chocolate chips evenly over the brownie batter.
Bake for 30 minutes, or until a toothpick comes out with moist crumbs.
Let cool completely in the pan.
For ganache: Heat cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth.
Pour ganache over cooled brownies and spread evenly.
Chill for at least 1 hour until ganache is set.
Slice into bars and serve.
