Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 2 tablespoons butter melted
  • 1/4 teaspoon salt

Instructions

  • In a large mixing bowl, whisk together flour and eggs. Gradually add milk and water, whisking to combine.
  • Stir in melted butter and salt; whisk until batter is smooth. Let rest for 30 minutes.
  • Heat a lightly oiled nonstick skillet over medium-high heat.
  • Pour about 1/4 cup of batter into the skillet, tilting the pan in a circular motion to coat evenly.
  • Cook until the top is no longer wet and the bottom is lightly browned, about 1–2 minutes.
  • Loosen edges with a spatula, flip, and cook for another 1 minute.
  • Repeat with remaining batter. Stack crepes on a plate and cover to keep warm.

Notes

  • Resting the batter ensures more tender crepes.
  • Use a nonstick skillet for best results.
  • Keep crepes warm in a low oven until ready to serve.
  • Add fillings after cooking to avoid tearing.
