Ingredients
  

  • 2 cups mashed potatoes preferably chilled leftovers
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped green onions
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray for muffin tin

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with cooking spray.
  • In a large bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan, green onions, garlic powder, salt, and pepper.
  • Mix until well blended.
  • Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 25–30 minutes, or until tops are golden and edges are crispy.
  • Let cool in the tin for 5 minutes, then gently remove and serve warm.

Notes

  • Use well-chilled mashed potatoes for best texture.
  • Add chopped turkey bacon or sautéed veggies for variety.
  • These reheat beautifully in the oven or air fryer.
