Ingredients

  • 2 ripe peaches peeled and diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon cornstarch
  • 24 wonton wrappers
  • Water for sealing
  • Vegetable oil for frying

Instructions

  • In a medium bowl, combine the diced peaches, brown sugar, cinnamon, and cornstarch. Stir until evenly coated.
  • Place a wonton wrapper on a clean surface. Add about 1 teaspoon of the peach filling in the center.
  • Moisten the edges of the wrapper with water using your finger. Fold the wrapper diagonally into a triangle, pressing the edges to seal.
  • Heat about 1.5 inches of vegetable oil in a deep skillet over medium-high heat until hot (around 350°F).
  • Carefully drop 4-5 wontons at a time into the oil. Fry for 1-2 minutes per side, or until golden brown.
  • Remove with a slotted spoon and drain on a paper towel-lined plate.
  • Serve warm, optionally with ice cream or a dusting of powdered sugar.

Notes

  • Don’t overfill the wontons or they’ll burst in the oil.
  • Keep the wonton wrappers covered with a damp towel while working so they don’t dry out.
  • Make sure oil is hot enough before frying to ensure crispiness.
  • These can be made ahead and reheated in an oven at 350°F for about 5-7 minutes.
