Ingredients
  

For the Chocolate Chaffles:

  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 2 tbsp cocoa powder unsweetened
  • 2 tbsp almond flour
  • 1 tbsp powdered erythritol or other keto sweetener
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract

For the Cream Filling:

  • 2 oz cream cheese softened
  • 1 tbsp powdered erythritol
  • 1/2 tsp vanilla extract
  • 1 tbsp heavy cream or coconut cream for dairy-free

Instructions
 

  • Preheat your mini waffle maker.
  • In a mixing bowl, whisk eggs, then add shredded mozzarella, cocoa powder, almond flour, sweetener, baking powder, and vanilla. Mix until fully combined.
  • Pour half of the batter into the preheated waffle maker. Close and cook for 3–4 minutes until firm. Repeat for the remaining batter (makes 4 chaffles total).
  • While chaffles are cooling, prepare the cream filling: Mix cream cheese, sweetener, vanilla, and cream in a bowl until smooth and fluffy.
  • Once chaffles are completely cool, spread the cream filling on two of the chaffles and top with the remaining chaffles to make sandwiches.
  • Serve immediately or chill for a firmer texture.

Notes

  • Let the chaffles cool fully before adding the filling to prevent melting.
  • Add 1–2 tsp of sugar-free chocolate chips to the batter for extra chocolatey flavor.
  • Use a piping bag for a neater cream filling presentation.
  • For a firmer texture, refrigerate for 30 minutes before serving.
  • Freeze extras and toast before eating for a crispy bite.
