For the Chocolate Chaffles:
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 2 tbsp cocoa powder unsweetened
- 2 tbsp almond flour
- 1 tbsp powdered erythritol or other keto sweetener
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
For the Cream Filling:
- 2 oz cream cheese softened
- 1 tbsp powdered erythritol
- 1/2 tsp vanilla extract
- 1 tbsp heavy cream or coconut cream for dairy-free
Preheat your mini waffle maker.
In a mixing bowl, whisk eggs, then add shredded mozzarella, cocoa powder, almond flour, sweetener, baking powder, and vanilla. Mix until fully combined.
Pour half of the batter into the preheated waffle maker. Close and cook for 3–4 minutes until firm. Repeat for the remaining batter (makes 4 chaffles total).
While chaffles are cooling, prepare the cream filling: Mix cream cheese, sweetener, vanilla, and cream in a bowl until smooth and fluffy.
Once chaffles are completely cool, spread the cream filling on two of the chaffles and top with the remaining chaffles to make sandwiches.
Serve immediately or chill for a firmer texture.
