Ingredients
  

  • 1 lb 450g ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 medium carrots sliced
  • 3 celery stalks chopped
  • 3 medium potatoes diced
  • 1 28 oz can diced tomatoes
  • 4 cups beef broth
  • 1 8 oz can tomato sauce
  • 1 cup frozen green beans or peas
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp thyme
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika optional

Instructions
 

  • Brown the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and transfer the beef to the slow cooker.
  • Prepare the Ingredients: Add diced onion, garlic, carrots, celery, and potatoes to the slow cooker.
  • Add Liquids & Seasonings: Pour in the diced tomatoes, beef broth, and tomato sauce. Stir in Worcestershire sauce, basil, oregano, thyme, salt, pepper, smoked paprika, and the bay leaf.
  • Cook Low & Slow: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender.
  • Add Green Beans: About 30 minutes before serving, stir in the frozen green beans and let them cook until heated through.
  • Serve & Enjoy: Remove the bay leaf, taste, and adjust seasoning if needed. Serve hot with crusty bread or a side salad.

  • Make it spicier by adding red pepper flakes or a dash of hot sauce.
