Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 small onion diced
  • 1 garlic clove minced
  • 1 14.5-ounce can whole peeled tomatoes
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 cup vegetable broth or water
  • 1/4 cup milk or dairy-free milk
  • 1/2 teaspoon dried basil or a few fresh leaves
  • Optional: 1 tablespoon heavy cream or dairy-free cream for garnish

Instructions
 

  • Heat olive oil in a medium saucepan over medium heat. Add diced onion and sauté until soft, about 3-4 minutes.
  • Stir in garlic and cook for 30 seconds until fragrant.
  • Add the can of tomatoes (with juices), sugar, basil, salt, pepper, and broth. Stir well.
  • Bring to a simmer and cook uncovered for 15 minutes, stirring occasionally.
  • Remove from heat and carefully transfer to a blender, or use an immersion blender to blend until smooth.
  • Return soup to the pot, stir in milk, and warm over low heat for 2-3 minutes.
  • Taste and adjust seasoning. Serve hot, garnished with cream and fresh basil if desired.

Notes

  • Use high-quality canned tomatoes for the best flavor.
  • Adjust sweetness with more or less sugar depending on tomato acidity.
  • For a creamier soup, add more milk or a swirl of cream before serving.
  • Add a pinch of red pepper flakes for spice.
  • Serve with grilled cheese or croutons for a complete meal.
