Ingredients
  

  • 1 Pillsbury fudge brownie mix + ingredients called for on the box oil, water, eggs
  • 8 oz cream cheese room temperature
  • ¼ cup butter room temperature
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 2 –3 cups mini marshmallows
  • 1 cup semi-sweet chocolate chunks or chips

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 13×9-inch baking pan with parchment paper.
  • In a mixing bowl, beat cream cheese, butter, and sugar until light and fluffy.
  • Add the egg and vanilla, mixing until smooth. Stir in flour just until combined. Set aside.
  • In a separate bowl, prepare the brownie mix with oil, water, and eggs as directed on the box.
  • Spread brownie batter evenly into the prepared pan.
  • Spoon cheesecake mixture over the brownie batter and spread into a thin layer.
  • Bake for 30 minutes.
  • Remove from oven and scatter marshmallows and chocolate chunks over the top.
  • Return to oven and bake for 5–10 minutes, until marshmallows are puffed and chocolate is melted.
  • Cool completely before slicing with a wet knife, cleaning the blade between cuts.

Notes

  • Neat cuts: Chill the bars for 30 minutes before slicing for cleaner edges.
  • Extra gooeyness: Add a drizzle of chocolate or caramel sauce over the top just before serving.
  • Storage: Keep bars in an airtight container at room temperature for up to 3 days, or refrigerate for a firmer texture.
