Ingredients
  

For the cookies:

  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest from about 2 lemons
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges of the cookies are lightly golden. Remove from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • While the cookies are cooling, make the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
  • Once the cookies are cool, drizzle the glaze over the top of each cookie. Allow the glaze to set before serving.

Notes

  • For a stronger lemon flavor, add more lemon zest to the glaze.
  • Make sure to let the cookies cool completely before glazing to prevent the glaze from melting into the cookies.
  • Store the glazed cookies in an airtight container at room temperature for up to 4-5 days.
