Keto Chocolate Crunch Bars are an easy no-bake treat made with sugar-free chocolate, nut butter, and crispy add-ins like nuts or keto cereal. Perfectly crunchy and creamy, these vegan, paleo, low-carb bars are great for snacking or dessert.

Ingredients
  

  • 1 1/2 cups sugar-free chocolate chips stevia or monk fruit sweetened
  • 1/2 cup nut butter almond, peanut, or sunflower seed butter
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract optional
  • 1 1/2 cups puffed keto cereal or chopped nuts/seeds e.g., almonds, pecans, pumpkin seeds
  • 1 tbsp chia seeds or flaxseed meal optional
  • Pinch of sea salt optional

Instructions
 

  • In a microwave-safe bowl or using a double boiler, melt the chocolate chips, nut butter, and coconut oil together until smooth.
  • Stir in vanilla extract if using.
  • Fold in puffed cereal, chopped nuts/seeds, and chia seeds or flaxseed meal until evenly coated.
  • Pour mixture into a parchment-lined 8x8-inch pan and spread evenly.
  • Sprinkle sea salt on top if desired.
  • Refrigerate for at least 1 hour or until firm.
  • Cut into bars and enjoy. Store in the fridge or freezer.

Notes

  • For more crunch, use roasted nuts or toasted seeds.
  • Add a layer of nut butter or coconut cream between chocolate layers for a filled version.
  • Use silicone molds for fun bar shapes or easy release.
