- 1 cup granulated sugar
- 1/2 cup heavy cream warmed
- 6 tablespoons unsalted butter cut into cubes
- 3/4 teaspoon flaky sea salt adjust to taste
Place the sugar in a medium, heavy-bottomed saucepan over medium heat. Stir constantly with a heat-resistant silicone spatula or wooden spoon.
The sugar will start to clump, then melt into a golden liquid. Keep stirring until completely smooth and amber in color.
Carefully whisk in the warmed heavy cream—the mixture will bubble up vigorously, so go slowly.
Once the bubbling settles, stir in the butter cubes until fully melted and incorporated.
Sprinkle in the sea salt and stir to combine.
Let the sauce simmer for 1-2 more minutes for a thicker texture.
Remove from heat and allow to cool slightly before transferring to a glass jar.
Store in the fridge for up to 2 weeks. Warm gently before serving.
