Homemade Salted Caramel Sauce

Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup heavy cream warmed
  • 6 tablespoons unsalted butter cut into cubes
  • 3/4 teaspoon flaky sea salt adjust to taste

Instructions
 

  • Place the sugar in a medium, heavy-bottomed saucepan over medium heat. Stir constantly with a heat-resistant silicone spatula or wooden spoon.
  • The sugar will start to clump, then melt into a golden liquid. Keep stirring until completely smooth and amber in color.
  • Carefully whisk in the warmed heavy cream—the mixture will bubble up vigorously, so go slowly.
  • Once the bubbling settles, stir in the butter cubes until fully melted and incorporated.
  • Sprinkle in the sea salt and stir to combine.
  • Let the sauce simmer for 1-2 more minutes for a thicker texture.
  • Remove from heat and allow to cool slightly before transferring to a glass jar.
  • Store in the fridge for up to 2 weeks. Warm gently before serving.

Notes

  • Warm the cream slightly before adding to prevent seizing.
  • Use a light-colored pan to better monitor the sugar’s color.
  • For deeper flavor, let the caramel go slightly darker—just don’t burn it!
  • Double the batch for gifting or future use.
  • Stir in a tiny splash of vanilla extract at the end for extra depth.
