In a small bowl, mix 1 cup flour, milk, sugar, and yeast. Stir and let sit 5–10 minutes until bubbly.
In a large bowl, combine remaining flour, butter, honey, egg, vanilla, salt, and cinnamon.
Add yeast mixture to the bowl. Mix with dough hook, adding remaining milk until dough is soft and elastic.
Place dough in an oiled bowl, cover, and let rise until doubled, about 2 hours.
Punch down dough and divide into 10 pieces. Shape into figure-eights, braids, or coils.
Place rolls on baking sheets, cover, and let rise again for 1 hour.
Preheat oven to 350°F (180°C). Brush rolls with beaten egg.
Bake 16–18 minutes until golden brown.
While still warm, brush with honey and sprinkle chopped nuts on top.
Cool slightly before serving.
