Honney Rolls with Nuts Sprinkle

Soft, golden rolls brushed with honey and finished with a sprinkle of crunchy nuts, these honey rolls are lightly sweetened and perfect for breakfast, brunch, or as a side to dinner. With their pillowy texture and subtle flavor, they bridge the gap between a comforting bread and a delicate pastry.

Ingredients
  

  • 1 cup all-purpose flour for starter
  • 1/2 cup lukewarm milk
  • 1 teaspoon sugar
  • 1 packet active dry yeast
  • 3 cups all-purpose flour
  • 1/2 cup butter melted
  • 1/4 cup honey
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon optional
  • ~1/3 cup lukewarm milk as needed
  • 1 egg lightly beaten (for brushing)
  • Extra honey and chopped nuts for topping

Instructions
 

  • In a small bowl, mix 1 cup flour, milk, sugar, and yeast. Stir and let sit 5–10 minutes until bubbly.
  • In a large bowl, combine remaining flour, butter, honey, egg, vanilla, salt, and cinnamon.
  • Add yeast mixture to the bowl. Mix with dough hook, adding remaining milk until dough is soft and elastic.
  • Place dough in an oiled bowl, cover, and let rise until doubled, about 2 hours.
  • Punch down dough and divide into 10 pieces. Shape into figure-eights, braids, or coils.
  • Place rolls on baking sheets, cover, and let rise again for 1 hour.
  • Preheat oven to 350°F (180°C). Brush rolls with beaten egg.
  • Bake 16–18 minutes until golden brown.
  • While still warm, brush with honey and sprinkle chopped nuts on top.
  • Cool slightly before serving.

Notes

  • Use lukewarm milk to activate yeast properly.
  • Don’t rush the rise — enriched dough takes longer but develops better flavor.
  • For extra flavor, toast the nuts before sprinkling.
  • Rolls freeze well; reheat in oven before serving.
