Inside Out S’mores Bars turn a campfire favorite into a kitchen-friendly classic. Chewy graham-flavored cookie dough sandwiches rich chocolate and fluffy marshmallow for a bar that’s as indulgent as it is easy to make.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups crushed graham crackers about 12 full sheets
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 7 oz jar marshmallow creme

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a 9x13-inch baking dish with parchment paper.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then mix in vanilla extract.
  • In a separate bowl, whisk together flour, crushed graham crackers, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture until combined.
  • Press half the dough into the bottom of the prepared pan.
  • Sprinkle evenly with chocolate chips.
  • Carefully spread marshmallow creme over the chocolate layer. It's sticky, so using greased fingers or a spatula helps.
  • Drop spoonfuls of the remaining dough on top and gently spread or pat down to cover.
  • Bake for 25 minutes, or until golden brown on top.
  • Let cool in the pan for at least 20 minutes before cutting into bars.

Notes

  • Use parchment paper to make it easier to lift and slice cleanly.
  • If marshmallow creme is too sticky to spread, microwave it for 10 seconds to loosen it up.
  • For neater layers, chill the dough for 10 minutes before assembling.
  • Try dark chocolate chips for a more intense flavor.
