Ingredients

  • 3 cups cooked shredded chicken (rotisserie chicken works great)
  • 1 cup sugar-free BBQ sauce
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 slices cooked bacon crumbled
  • 2 green onions chopped
  • Salt and pepper to taste

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Mix the Chicken & Sauce: In a large bowl, combine the shredded chicken, sugar-free BBQ sauce, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well until the chicken is evenly coated.
  • Assemble the Casserole: Transfer the chicken mixture to the prepared baking dish and spread it out evenly. Sprinkle the shredded cheddar and mozzarella cheese over the top.
  • Bake: Place the casserole in the oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
  • Garnish & Serve: Remove from the oven and sprinkle with crumbled bacon and chopped green onions. Serve hot and enjoy!
