Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs (or breasts)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: red pepper flakes or lemon zest for garnish

Instructions
 

  • Season chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, reduce heat to medium. Add butter and garlic. Sauté for 1 minute until fragrant.
  • Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and sauce is creamy.
  • Add spinach and cook until wilted.
  • Return chicken to skillet and spoon sauce over top. Simmer for 2-3 minutes to reheat and meld flavors.
  • Garnish with optional red pepper flakes or lemon zest. Serve warm.

Notes

  • For thicker sauce, simmer a few extra minutes before adding spinach.
  • Use freshly grated Parmesan for the best melt and flavor.
  • Swap spinach for kale or mushrooms for a different twist.
  • Store leftovers in an airtight container for up to 3 days.
