- 1.5 lbs boneless skinless chicken thighs (or breasts)
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- Optional: red pepper flakes or lemon zest for garnish
Season chicken with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, reduce heat to medium. Add butter and garlic. Sauté for 1 minute until fragrant.
Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and sauce is creamy.
Add spinach and cook until wilted.
