Ingredients
  

  • 1 lb cooked corned beef or turkey pastrami chopped
  • 1 tbsp olive oil or butter
  • 1 cup sauerkraut drained well
  • 1 cup shredded Swiss cheese
  • 1/2 tsp caraway seeds optional, for rye flavor
  • Salt and pepper to taste

For the Keto Thousand Island Dressing:

  • 1/2 cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp finely chopped pickles or dill relish
  • 1/2 tsp white vinegar
  • Salt and pepper to taste

Instructions
 

  • In a large skillet, heat olive oil or butter over medium heat.
  • Add the chopped corned beef or turkey pastrami and cook for 5-6 minutes, until heated through and slightly crispy on the edges.
  • Stir in caraway seeds if using, and cook for an additional 1 minute.
  • Push the meat to one side of the skillet and add the sauerkraut. Cook for 2-3 minutes until warm.
  • Lower the heat and sprinkle the Swiss cheese evenly over the meat and sauerkraut. Cover the skillet with a lid for 2 minutes, or until cheese is fully melted.
  • While the cheese is melting, mix all the dressing ingredients in a small bowl. Taste and adjust seasoning.
  • To serve, scoop the meat, sauerkraut, and cheese into bowls and drizzle generously with the dressing.
  • Garnish with extra pickles or fresh parsley if desired. Serve warm.

Notes

  • Use freshly sliced deli corned beef or turkey for best flavor.
  • Drain sauerkraut well to avoid excess liquid in the bowl.
  • Store leftovers in an airtight container for up to 3 days.
  • Double the dressing recipe and keep some on hand for salads or burgers.
