Lemon Lush is a refreshing layered dessert that combines a buttery shortbread crust, creamy cheesecake filling, smooth lemon pudding, and a fluffy whipped topping. Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 ½ cups cold milk
  • 2 packages 3.4 oz each instant lemon pudding mix
  • 12 oz whipped topping thawed

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Combine flour and butter in a bowl, cutting together until crumbly. Press firmly into a greased 9×13-inch baking dish.
  • Bake for about 25 minutes until lightly golden. Let crust cool completely.
  • Beat cream cheese and sugar until smooth and creamy. Spread evenly over cooled crust.
  • In another bowl, whisk milk with lemon pudding mix for 3–5 minutes until thickened. Spread pudding mixture over cream cheese layer.
  • Chill in refrigerator until pudding is set, about 2 hours.
  • Spread whipped topping evenly across the top. Slice and serve chilled.

Notes

  • For a stronger lemon flavor, add a teaspoon of lemon zest to the pudding layer.
  • Chill overnight for the best flavor and texture.
  • Top with fresh berries for extra color and freshness.
  • Use a serrated knife to slice neatly through the layers.
