Ingredients

  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts (cut in half horizontally)
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes in oil drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 8 oz pasta fettuccine, penne, or your choice
  • Fresh basil for garnish

Instructions

  • Cook pasta according to package directions. Drain and set aside.
  • Season chicken with salt, pepper, garlic powder, and paprika.
  • In a large skillet, heat olive oil over medium heat. Sear chicken until golden and cooked through (about 4–5 minutes per side). Remove and set aside.
  • In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1–2 minutes.
  • Pour in chicken broth and bring to a simmer. Add heavy cream, Parmesan, and Italian seasoning. Stir and simmer for 4–5 minutes until thickened.
  • Slice cooked chicken and return to skillet.
  • Add pasta to the sauce and toss to coat evenly.
  • Garnish with fresh basil and more Parmesan before serving.

Notes

  • Use freshly grated Parmesan for best melting and flavor.
  • Don’t overcook the chicken—just sear until juices run clear.
  • To lighten the dish, swap heavy cream for half-and-half.
  • Add spinach, mushrooms, or even a splash of white wine for variation.
  • Reserve a bit of pasta water to loosen the sauce if needed.
