Ingredients
2tablespoonsolive oil
2bonelessskinless chicken breasts (cut in half horizontally)
Salt and black pepper to taste
1teaspoongarlic powder
1teaspoonpaprika
3clovesgarlicminced
1/2cupsun-dried tomatoes in oildrained and chopped
1cupchicken broth
1cupheavy cream
1/2cupgrated Parmesan cheese
1teaspoonItalian seasoning
8ozpastafettuccine, penne, or your choice
Fresh basil for garnish
Instructions
Cook pasta according to package directions. Drain and set aside.
Season chicken with salt, pepper, garlic powder, and paprika.
In a large skillet, heat olive oil over medium heat. Sear chicken until golden and cooked through (about 4–5 minutes per side). Remove and set aside.
In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1–2 minutes.
Pour in chicken broth and bring to a simmer. Add heavy cream, Parmesan, and Italian seasoning. Stir and simmer for 4–5 minutes until thickened.
Slice cooked chicken and return to skillet.
Add pasta to the sauce and toss to coat evenly.
Garnish with fresh basil and more Parmesan before serving.
Notes
Use freshly grated Parmesan for best melting and flavor.
Don’t overcook the chicken—just sear until juices run clear.
To lighten the dish, swap heavy cream for half-and-half.
