Step 1: Prepare the Dough
In a small bowl, mix warm water, yeast, and sugar. Let it sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
Step 2: Prepare the Mushroom Topping
In a skillet over medium heat, heat olive oil and sauté the minced garlic until fragrant (about 30 seconds).
Add the sliced mushrooms, salt, and black pepper. Cook for 5-7 minutes until the mushrooms are tender and slightly browned.
Stir in the thyme and rosemary, then remove from heat.
Step 3: Assemble the Pizza
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it preheats.
Roll out the pizza dough on a floured surface to your desired thickness.
Transfer the dough to a parchment-lined baking sheet or preheated pizza stone.
Brush the surface with a little olive oil. Spread the sautéed mushrooms evenly over the dough.
Sprinkle mozzarella and Parmesan cheese on top. Add red pepper flakes if using.
Step 4: Bake the Pizza
Bake for 12-15 minutes or until the crust is golden brown and the cheese is bubbling.
Remove from the oven and let it cool for a few minutes.
Garnish with fresh basil leaves, slice, and serve warm.
