Ingredients

  • 2 ¼ teaspoons 1 packet active dry yeast
  • ¾ cup warm water 110°F or 45°C
  • 1 teaspoon sugar
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil

For the Toppings:

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 8 oz 225g mixed mushrooms (cremini, shiitake, or portobello), sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary chopped
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes optional
  • Fresh basil leaves for garnish

Instructions

  • Step 1: Prepare the Dough
  • In a small bowl, mix warm water, yeast, and sugar. Let it sit for about 5-10 minutes until frothy.
  • In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  • Step 2: Prepare the Mushroom Topping
  • In a skillet over medium heat, heat olive oil and sauté the minced garlic until fragrant (about 30 seconds).
  • Add the sliced mushrooms, salt, and black pepper. Cook for 5-7 minutes until the mushrooms are tender and slightly browned.
  • Stir in the thyme and rosemary, then remove from heat.
  • Step 3: Assemble the Pizza
  • Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it preheats.
  • Roll out the pizza dough on a floured surface to your desired thickness.
  • Transfer the dough to a parchment-lined baking sheet or preheated pizza stone.
  • Brush the surface with a little olive oil. Spread the sautéed mushrooms evenly over the dough.
  • Sprinkle mozzarella and Parmesan cheese on top. Add red pepper flakes if using.
  • Step 4: Bake the Pizza
  • Bake for 12-15 minutes or until the crust is golden brown and the cheese is bubbling.
  • Remove from the oven and let it cool for a few minutes.
  • Garnish with fresh basil leaves, slice, and serve warm.
