  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1/2 cup peanut butter smooth or crunchy
  • 1 cup semisweet or dark chocolate chips

Instructions

  • Line an 8x8 or 9x9-inch square baking dish with parchment paper, leaving some overhang for easy removal.
  • In a large saucepan over medium heat, melt butter and brown sugar together until smooth and sugar is fully dissolved.
  • Stir in vanilla extract, then add oats and mix until fully coated.
  • Cook oat mixture over low heat for 3-4 minutes, stirring occasionally.
  • Press half of the oat mixture evenly into the bottom of the prepared baking dish.
  • In a microwave-safe bowl, melt peanut butter and chocolate chips together in 30-second intervals, stirring until smooth.
  • Pour the chocolate-peanut mixture over the oat base and spread into an even layer.
  • Press the remaining oat mixture on top, then gently drizzle any leftover chocolate mixture.
  • Refrigerate for 2-3 hours or until fully set. Bring to room temperature before slicing into bars.

  • Don't skip the chilling step—it's key to firm texture.
  • For a firmer bar, press each layer down firmly with a spatula.
  • Add mini marshmallows or chopped peanuts for a twist.
  • Store in an airtight container in the fridge for up to a week.
