Ingredients

  • 2 cups granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 cup unsalted butter or margarine
  • 1/2 cup milk
  • Pinch of salt
  • 3 cups quick-cooking oats
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract

Instructions

  • In a medium saucepan, combine sugar, cocoa powder, butter, milk, and salt. Bring to a full rolling boil over medium heat.
  • Once boiling, continue to cook for exactly 1 minute, stirring constantly.
  • Remove from heat and immediately stir in oats, peanut butter, and vanilla extract until fully combined.
  • Drop tablespoon-sized portions onto wax or parchment paper.
  • Let cool at room temperature until set, about 30 minutes. (Speed it up by placing them in the fridge.)

Notes

  • Timing is key: boiling the mixture for exactly 1 minute ensures proper setting.
  • Use quick oats for smoother texture; old-fashioned oats for more chew.
  • Store in an airtight container at room temperature for up to 5 days or freeze for longer storage.
  • Want extra decadence? Stir in mini chocolate chips after mixing.
