Peanut Butter M&M Cookies

- 1 cup creamy peanut butter
- ¾ cup firmly packed brown sugar
- 2 tablespoons additional brown sugar
- 1 large egg room temperature
- 1 teaspoon baking soda
- 1 ½ teaspoons vanilla extract
- ¼ teaspoon salt
- ⅛ teaspoon ground nutmeg
- ½ cup mini M&Ms or similar chocolate candies
Preheat oven to 350°F. Line two baking sheets with parchment.
Mix peanut butter, sugars, egg, baking soda, vanilla, salt, and nutmeg until smooth. Stir in mini M&Ms.
Scoop dough into 1 ½ tablespoon balls, place on baking sheet, and flatten slightly.
Bake 10 minutes, until tops begin to crack. Cool on baking sheet for 10 minutes, then transfer to a rack.

For extra flavor, stir in a handful of chopped peanuts along with the M&Ms.
