Ingredients
  

  • 1 package 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 sheet puff pastry thawed
  • 1/2 cup raspberry preserves or jam
  • Fresh raspberries about 24
  • 1 egg for egg wash
  • Powdered sugar for dusting optional

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a medium bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  • On a lightly floured surface, roll out puff pastry and cut into 24 equal squares.
  • Place each square into the cavity of a mini muffin tin, gently pressing down to form a cup.
  • Fill each cup with about 1 teaspoon of the cream cheese mixture.
  • Add 1/2 teaspoon of raspberry preserves on top of the cream cheese.
  • Place one fresh raspberry on top of the filling.
  • Brush the edges of the puff pastry with beaten egg.
  • Bake for 18–20 minutes, or until the pastry is golden brown and puffed.
  • Let cool for 10 minutes. Dust with powdered sugar if desired and serve.

Notes

  • Make sure the cream cheese is fully softened before mixing to avoid lumps.
  • Use mini muffin tins to help the puff pastry hold its shape while baking.
  • For added flavor, sprinkle a little lemon zest into the cream cheese mixture.
  • These bites can be prepped and frozen unbaked. Just bake directly from frozen, adding a few minutes to the baking time.
  • Serve slightly warm or at room temperature for best flavor and texture.
