- 1 package 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 sheet puff pastry thawed
- 1/2 cup raspberry preserves or jam
- Fresh raspberries about 24
- 1 egg for egg wash
- Powdered sugar for dusting optional
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a medium bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
On a lightly floured surface, roll out puff pastry and cut into 24 equal squares.
Place each square into the cavity of a mini muffin tin, gently pressing down to form a cup.
Fill each cup with about 1 teaspoon of the cream cheese mixture.
Add 1/2 teaspoon of raspberry preserves on top of the cream cheese.
Place one fresh raspberry on top of the filling.
Brush the edges of the puff pastry with beaten egg.
Bake for 18–20 minutes, or until the pastry is golden brown and puffed.
Let cool for 10 minutes. Dust with powdered sugar if desired and serve.
