Ingredients
  

  • 1 box 15.25 oz red velvet cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup white chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the cake mix, eggs, vegetable oil, and vanilla extract. Mix until fully incorporated.
  • Fold in white chocolate chips if using.
  • Scoop about 1 tablespoon of dough and roll into a ball.
  • Place balls of dough 2 inches apart on the prepared baking sheet.
  • Bake for 9-11 minutes, until the tops are set but the centers still look slightly soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
