Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ cups graham cracker crumbs
  • 1 ¼ cups mini marshmallows
  • 1 cup semisweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
  • In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the mini marshmallows and chocolate chips.
  • Drop tablespoon-sized balls of dough onto an ungreased baking sheet, spacing them about 2 inches apart.
  • Bake for 10 to 12 minutes or until the edges are golden brown and the marshmallows are melted.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Don’t overmix the dough once you add the dry ingredients. Mixing just until combined ensures soft, chewy cookies.
  • For an extra gooey effect, press a few extra marshmallows into the tops of the cookies before baking.
  • If you like a bit more crunch, you can add some chopped graham crackers on top of the dough balls before baking.
