- 1 cup unsalted butter softened
- 1 ½ tsp vanilla extract
- 2 cups all-purpose flour
- 6 tbsp powdered sugar plus more for coating
- 1 cup finely chopped walnuts or pecans
- 1/4 tsp salt
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together softened butter and vanilla extract until smooth.
In a separate bowl, whisk together flour, powdered sugar, and salt. Gradually add to the butter mixture until just combined.
Fold in the chopped nuts until evenly distributed. The dough may be slightly crumbly.
Scoop about 1 tablespoon of dough and roll into 1-inch balls with your hands.
Place cookies 2 inches apart on prepared baking sheet.
Bake for 11–13 minutes or until edges are just beginning to turn golden.
Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
Once cool, roll each cookie in powdered sugar. For an extra snowy finish, roll again after 10 minutes.
