Ingredients
  

  • 1 cup unsalted butter softened
  • 1 ½ tsp vanilla extract
  • 2 cups all-purpose flour
  • 6 tbsp powdered sugar plus more for coating
  • 1 cup finely chopped walnuts or pecans
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together softened butter and vanilla extract until smooth.
  • In a separate bowl, whisk together flour, powdered sugar, and salt. Gradually add to the butter mixture until just combined.
  • Fold in the chopped nuts until evenly distributed. The dough may be slightly crumbly.
  • Scoop about 1 tablespoon of dough and roll into 1-inch balls with your hands.
  • Place cookies 2 inches apart on prepared baking sheet.
  • Bake for 11–13 minutes or until edges are just beginning to turn golden.
  • Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Once cool, roll each cookie in powdered sugar. For an extra snowy finish, roll again after 10 minutes.

  • For deeper flavor, toast the nuts before chopping.
  • You can freeze unbaked dough balls for up to 2 months.
  • Use a food processor to get finely chopped nuts quickly.
