Ingredients

  • 6 oz egg noodles or ramen noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sriracha adjust to taste
  • 1/2 teaspoon red pepper flakes optional, for extra spice
  • 1 tablespoon butter
  • 2 eggs lightly beaten
  • 2 cloves garlic minced
  • 2 green onions sliced
  • 1 teaspoon sesame oil optional, for extra flavor
  • Sesame seeds and fresh cilantro for garnish optional

Instructions

  • Cook the noodles according to package instructions, then drain and set aside.
  • In a small bowl, mix soy sauce, brown sugar, sriracha, and red pepper flakes (if using). Set aside.
  • In a large pan or wok, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  • Push the garlic to one side of the pan and pour in the beaten eggs. Scramble them gently until just set.
  • Add the cooked noodles to the pan and pour the sauce over them. Toss everything together until the noodles are evenly coated and heated through.
  • Remove from heat and stir in sliced green onions and sesame oil (if using).
  • Garnish with sesame seeds and fresh cilantro before serving.

Notes

  • Adjust the heat: Add more or less sriracha depending on your spice preference.
  • Add protein: Toss in cooked shrimp, chicken, or tofu to make the dish more filling.
  • Boost the veggies: Stir-fry bell peppers, snap peas, or shredded carrots for added texture and nutrition.
  • Use fresh noodles: If available, fresh lo mein or rice noodles work beautifully in this recipe.
