Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or a light coat of olive oil.
Unroll one can of crescent roll dough and press it into the bottom of the baking dish, sealing any perforations.
Layer half of the ham, salami, and pepperoni evenly over the dough.
Add a layer of provolone cheese, followed by a layer of mozzarella cheese.
Sprinkle the chopped roasted red peppers evenly over the cheese.
Repeat the layering with the remaining meats and cheeses.
Unroll the second can of crescent roll dough and place it over the top, pressing the edges to seal.
In a small bowl, beat the eggs with oregano, garlic powder, and black pepper.
Brush the egg mixture over the top of the dough, then sprinkle with grated Parmesan cheese.
Drizzle olive oil over the top for extra crispiness.
Bake for 35 minutes, or until the top is golden brown and crisp.
Let it cool for at least 10 minutes before slicing into squares and serving.
