Ingredients
  

  • 1 1/4 cups 162 g all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup 1 stick unsalted butter, softened
  • 3/4 cup 150 g sugar
  • 2 large eggs
  • 1/2 tablespoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup rainbow sprinkles jimmies style, not nonpareils
  • 1 1/4 cups powdered sugar
  • 2 tablespoons unsalted butter softened
  • 2 tablespoons sour cream
  • 1/2 teaspoon vanilla extract
  • Extra sprinkles for garnish

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round pans.
  • In a bowl, whisk flour, baking powder, and salt.
  • In another bowl, beat butter and sugar until light and fluffy. Add eggs and vanilla, mixing well.
  • Add flour mixture and milk alternately, beginning and ending with flour. Mix until smooth.
  • Fold in sprinkles gently to avoid color bleeding.
  • Divide batter between pans and bake 25 minutes, until a toothpick comes out clean. Cool completely.
  • For frosting, beat powdered sugar, butter, sour cream, and vanilla until smooth.
  • Spread frosting between cake layers, then frost top and sides.
  • Garnish generously with more sprinkles.
