Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or homemade blend
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can corn, drained
  • 1 14.5 oz can diced tomatoes with green chilies (like Rotel)
  • 1 14.5 oz can crushed tomatoes
  • 2 cups beef broth
  • 1 tsp cumin
  • 1/2 tsp chili powder adjust to taste
  • Salt and pepper to taste
  • Optional toppings: shredded cheese sour cream, avocado, tortilla chips, cilantro

Instructions
 

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess grease if necessary.
  • Add the diced onion and garlic, cooking until softened, about 3 minutes.
  • Stir in the taco seasoning, cumin, and chili powder. Cook for another minute to enhance the flavors.
  • Add the black beans, kidney beans, corn, diced tomatoes, crushed tomatoes, and beef broth. Stir well to combine.
  • Bring the soup to a simmer and let it cook for 20–25 minutes, stirring occasionally.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve hot, topped with your favorite toppings like shredded cheese, sour cream, and tortilla chips.
