For the Oreo Crust:
- 24 Oreo cookies
- 5 tbsp melted butter
For the Cheesecake Filling:
- 3 8 oz packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
For the Toppings:
- 1/2 cup semisweet or dark chocolate chips
- 1/3 cup heavy cream
- 1/2 cup caramel sauce store-bought or homemade
- 1/2 cup chopped pecans toasted
Make the Crust:
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
Pulse Oreo cookies into fine crumbs, mix with melted butter.
Press mixture into the bottom of the pan. Bake for 10 minutes. Cool.
