Ingredients
  

For the Oreo Crust:

  • 24 Oreo cookies
  • 5 tbsp melted butter

For the Cheesecake Filling:

  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract

For the Toppings:

  • 1/2 cup semisweet or dark chocolate chips
  • 1/3 cup heavy cream
  • 1/2 cup caramel sauce store-bought or homemade
  • 1/2 cup chopped pecans toasted

Instructions
 

Make the Crust:

  • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Pulse Oreo cookies into fine crumbs, mix with melted butter.
  • Press mixture into the bottom of the pan. Bake for 10 minutes. Cool.

Make the Cheesecake:

  • Beat cream cheese until smooth.
  • Add sugar and beat until combined.
  • Mix in sour cream and vanilla.
  • Add eggs one at a time, beating on low until just incorporated.
  • Pour over cooled crust.
  • Bake in a water bath for 55-65 minutes, or until edges are set but center slightly jiggles.
  • Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
  • Remove and chill at least 6 hours or overnight.

Add the Toppings:

  • Heat chocolate chips and cream in a microwave-safe bowl until melted and smooth.
  • Spread chocolate ganache over chilled cheesecake.
  • Drizzle with caramel sauce.
  • Sprinkle with toasted pecans.
