Rice Krispies S’mores Bars Recipe

Rice Krispies S’mores Bars Recipe – Layers of buttery graham cracker crust, milk chocolate, gooey marshmallows, and chewy chocolate rice krispies, these smores bars will quickly become a summer favorite!

2 cups graham crackers crumbs
1/2 cup butter, melted
1/3 cup sugar
9 bars (1.5 oz each) milk chocolate
~12 oz regular size marshmallows
12 oz semi-sweet chocolate, roughly chopped (chocolate chips could also be used)
2/3 cup light corn syrup
4 tablespoons butter
6 oz miniature marshmallows
3 cups rice krispie cereals


  1. Heat the oven to 350F.
  2. Line a 13X9″ baking pan with parchment paper of aluminum foil. Optional, grease the paper or foil with cooking spray. Set the pan aside.
  3. In a mixing bowl, combine the graham crackers crumbs, melted butter and sugar.
  4. Press the mixture on the bottom of the prepared baking pan.
  5. Bake in preheated oven for 5 minutes.
  6. Remove from the oven but do not turn the oven off.
  7. Arrange the milk chocolate bars over the par-baked crust. They will start to melt.
  8. Arrange the marshmallows in a single layer over the chocolate.
  9. Return the baking pan to the oven and continue to bake until the marshmallows and puffy, about 7-10 minutes.
  10. Remove from the oven and let cool for 20-30 minutes.
  11. Make the rice krispie mixture.
  12. In a medium size saucepan add the chocolate, corn syrup, butter and marshmallows.
  13. Stir constantly oven medium low heat until the chocolate and marshmallows are melted.
  14. Stir in the cereals.
  15. Spread the chocolate rice krispie mixture evenly over the marshmallows.
  16. Cover and refrigerate for at least 1 hour or until firm.
  17. With a sharp knife, cut into bars.
  18. For clean cuts, I placed the entire pan in the freezer for 1 hour and cut with sharp knife letting the bars get to room temperature afterwards.
