Ingredients
  

  • 1 lb cooked corned beef chopped or shredded (or use deli-sliced beef if preferred)
  • 1 cup sauerkraut drained well
  • 1 1/2 cups shredded Swiss cheese
  • 1/2 cup shredded mozzarella optional, for extra meltiness

For the Keto Russian Dressing:

  • 1/2 cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp dill pickle relish no sugar added
  • 1 tsp apple cider vinegar
  • 1/4 tsp paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease an 8x8-inch baking dish.
  • In a small bowl, whisk together all ingredients for the keto Russian dressing.
  • Spread half the chopped corned beef in the baking dish.
  • Layer the sauerkraut evenly over the beef.
  • Drizzle half of the dressing over the sauerkraut.
  • Sprinkle with half the cheese mixture.
  • Repeat layers with remaining corned beef, dressing, and cheese.
  • Bake uncovered for 20–25 minutes, or until cheese is bubbly and golden.
  • Let cool slightly before serving.

  • Use store-bought deli corned beef for quick prep.
