Ingredients
  

For the Brownie Layer:

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt

For the Cookie Layer:

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips
  • 8 –10 Oreo cookies chopped into chunks

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • Start with the brownie layer. In a medium bowl, whisk together the melted butter and sugar. Add eggs and vanilla, mixing until smooth.
  • Stir in cocoa powder, flour, and salt until fully combined. Spread the brownie batter evenly in the prepared pan.
  • For the cookie dough layer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients.
  • Fold in chocolate chips and chopped Oreo chunks.
  • Drop spoonfuls of the cookie dough on top of the brownie batter. Gently spread it with a spatula to cover evenly.
  • Bake for 30–35 minutes or until a toothpick inserted comes out with a few moist crumbs.
  • Allow to cool in the pan for at least 20 minutes before slicing into squares.

Notes

  • For extra gooey brookies, underbake slightly and let them finish setting as they cool.
  • Use a mix of classic and Double Stuf Oreos for more creaminess.
  • Add a pinch of espresso powder to the brownie batter for a deeper chocolate flavor.
  • Store leftovers in an airtight container for up to 4 days.
