Mini buckeye bites are an easy, no-bake treat made with creamy peanut butter and dipped in chocolate. Simple ingredients, quick prep, and irresistible flavor make them a go-to dessert for any occasion.

Ingredients
  

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 1/2 cups semisweet chocolate chips
  • 1 tablespoon coconut oil or butter optional, for smoother chocolate

Instructions
 

  • In a large bowl, mix peanut butter, softened butter, and vanilla until smooth.
  • Gradually add powdered sugar and mix until dough forms. It should be firm but pliable.
  • Scoop and roll into 1-inch balls. Place on a baking sheet lined with parchment.
  • Chill in the fridge for 30 minutes.
  • Melt chocolate chips with coconut oil (if using) in the microwave or double boiler until smooth.
  • Dip each ball halfway into melted chocolate. Let excess drip off and place back on parchment.
  • Chill again until chocolate sets, about 10–15 minutes.

Notes

  • Use a small cookie scoop for even portions.
  • Don’t skip chilling—the peanut butter balls need to be firm before dipping.
  • Store in the fridge for up to a week or freeze for longer storage.
