Mini Buckeye Bites Recipe
Mini buckeye bites are an easy, no-bake treat made with creamy peanut butter and dipped in chocolate. Simple ingredients, quick prep, and irresistible flavor make them a go-to dessert for any occasion.

- 1 cup creamy peanut butter
- 1/4 cup unsalted butter softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 1 1/2 cups semisweet chocolate chips
- 1 tablespoon coconut oil or butter optional, for smoother chocolate
In a large bowl, mix peanut butter, softened butter, and vanilla until smooth.
Gradually add powdered sugar and mix until dough forms. It should be firm but pliable.
Scoop and roll into 1-inch balls. Place on a baking sheet lined with parchment.
Chill in the fridge for 30 minutes.
Melt chocolate chips with coconut oil (if using) in the microwave or double boiler until smooth.
Dip each ball halfway into melted chocolate. Let excess drip off and place back on parchment.
Chill again until chocolate sets, about 10–15 minutes.
