Ingredients
1/2 cup honey
1/4 cup (4 tablespoons) unsalted butter
1/2 cup chocolate hazelnut spread (Nutella)
1/2 teaspoon salt
3/4 cup dry roasted salted peanuts
1 3/4 cups Special K cereal

Instructions
- Line a baking sheet with parchment paper or silpat liner and set aside.
- In a medium saucepan, combine honey and butter. Over medium-low heat, cook until both ingredients are fully incorporated. Bring to a boil and let cook for about a minute. Remove from the stove and stir in Nutella and salt. Continue stirring until mixture is smooth.
- Pour peanuts and cereal into a large bowl and mix. Pour Nutella mixture over the dry ingredients and stir until evenly coated.
- Using a large cookie scoop, drop cluster mixture onto the prepared baking sheet and shape into cookies, if necessary. Place in the fridge for at least 1 hour or until set.
Notes
Clusters will keep up to 1 week stored in an airtight container in the fridge or up to 2 months in the freezer.
